Sweet Dosai



A healthy summer holiday snack for your kids, Sweet dosai. It can be had for breakfast or as a evening snack. Since it is made at home with healthy ingredients you know that you are giving your kids good and hygienic food.

Sweet Dosai

No. of Dosai : 10

Ingredients

Raw Rice (not idly rice) - 3 cups

Cooked steamed rice - 1 cup

Coconut grated - 1/2 cup

Sugar - 1 cup

Cardamom powder - 1 tsp

Yeast - 1/4 tsp

Salt - 1/4 tsp



Preparation Method

1. Soak raw rice in water for 8 hrs.

2. Grind to smooth paste along with cooked rice , grated coconut, sugar, salt and cardamom powder.

3. Let it to ferment overnight.

4. Half an hour before making dosai add the yeast and let it rest for 1/2 hr.

5. Make dosai in tawa , cover and cook till it is done.

Beetroot Chapati




Today I have chosen beetroot chapati, it's a wonderful way of making your fuzzy kids eat their veggies.

Beetroot has a lot of health benefits. It is high in immune boosting vitamin c, fibre, essential minerals like potassium, manganese. It is rich in folate and reduces the risk of birth defects.

Beetroot Chapati

No. of Serving : 6 - 7

Ingredients

Whole wheat flour - 2 cups

Beetroot - 1 medium

Ginger Garlic paste - 1/4 tsp

Red chilli powder - 1 tsp

Turmeric powder - 1/4 tsp

Oil - 2 tbsp

Water as required

Salt to taste



Preparation Method

1. Peel, chop and grind beetroot into a fine paste along with ginger garlic paste, red chilli powder and turmeric powder.

2. In a mixing bowl add whole wheat flour and salt and mix well.

3. Add oil and mix well.

4. Add the ground paste little by little and mix well, add water as required and make a thick dough.

5. Let it rest for 1/2 hr.

6. Roll out chappati and toast it in tava on both sides.

7. Serve with onion raita.

Apple Jam with Jaggery



My twist on the regular apple jam is that I have added jaggery instead of regular white sugar, jaggery is much better than the regular white sugar.

Apple Jam

No. of Serving : 10

Ingredients

Apple grated - 2 cups

Jaggery - 1 cup

Water as required


Preparation Method

1. Dissolve jaggery with little water, bring it to a boil and filter and keep aside.

2. In a pan add grated apple and 1/4 cup water and cook till the apple is done.

3. Add the filtered jaggery syrup and let it boil till it thicknes.

4. Serve with bread.

Note

No preservative is needed.

Keep refrigerated.

It keeps good for 3 weeks in the refrigerator.

Beetroot Pancake




This is my 100th post, thanks my dear friends and viewers for your like and valuable comments and for supporting me.

In this version of pancake I have added beetroot puree for more flavour and nutrition. Beetroot is high in immune boosting vitamin C, fibre. It is a good source of potassium which is good for healthy nerve and muscle function. It also contains manganese and B vitamin folate.

Beetroot Pancake

No. of Pancakes : 10

Ingredients

Maida / All purpose flour - 1 cup

Milk - 1 cup

Egg - 1

Beetroot - 1 medium

Sugar - 1/2 cup



Preparation Method

1. Peel, chop and grind beetroot into a puree.

2. In a mixing bowl, beat egg, add the other ingredients and beetroot puree and mix well.

3. Heat a dosa tawa and make pancakes.


4. Garnish with sliced almonds or any dry fruits and nuts.

Apple Pancake



The best way to incorporated fruits to your fussy kids is by making pancakes. In this recipe I have used whole wheat flour instead of all purpose flour to make it more healthy. Apple are a good source of nutrition. You can add any fruit of your choice.

Apple Pancake

No. of Pancakes : 10

Ingredients

Whole wheat flour - 1 cup

Apple - 1 medium

Egg - 1

Milk - 1 1/4 cup

Sugar - 1/2 cup

Cinnamon powder - 1/4 tsp


Preparation Method

1. Grate apple and keep aside.

2. In a mixing bowl beat well egg and sugar.

3. Add milk and cinnamon, mix well.

4. Add whole wheat flour and mix well so that lumps do not form.

5. Add the grated apple.

6. Heat dosa tawa and make pancakes.

7. You can add ghee if required, it is optional.

8. Garnish with chopped nuts.

Millet Apple Porridge



My twist on this regular traditional porridge is that I have added apple for more nutrition and flavour. Apple has lots of nutrients in it. It's extremely high in antioxidants, flavanoids and dietary fibre. It helps reduced heart diseases, diabetics, hypertension and cancer.

Millet Apple Porridge

No. of Serving : 3

Ingredients

Millet flour - 1 cup

Water - 500 ml

Cardamom powder - 1/2 tsp

Milk - 100 ml

Apple - 1 medium


Preparation Method

1. Peel and grind apple into a puree, keep aside.

2. To the 500 ml of water mix millet flour and keep over medium flame and keep stirring continuously till it is cooked. This will take around 10 minutes.

3. Add the apple puree and cardamom and milk and boil for 5 minutes.

4. Serve hot or at room temperature.

Chocolate Bread Pudding



My twist on this bread pudding is that I have added cocoa powder to make it more flavourful. You don't need an oven to do this bread pudding. I steamed it in a pressure cooker and it turned out delicious and yum :)

Bread Pudding - in pressure cooker

No. of Serving : 5

Ingredients

Bread - 10 - 12 slices

Milk - 500 ml

Egg - 5

Sugar - 1 cup

Cocoa powder  - 3 tbsp



Preparation Method

1. In a flat bottom pan which you can place inside the pressure cooker, take milk, egg and sugar and beat well.

2. Add cocoa powder and mix well.

3. Add the bread slices along with its edges, the edges will be tasty after cooked so you can add them also.

4. Pour water in the pressure cooker, place this vessel inside, close with a lid, do not put the whistle.

5. Steam cook it for 20 minutes.

6. Garnish with chocolate chips or chocolate shavings and nuts.

Mudakathan Keerai Dosai



Mudakathan Keerai is an healthy and medicinal greens. It's used as a remedy for joint pain and arthritis. It's used to cure cough, cold and also dandruff. I added tomato to cut the bitterness of the greens and also added red chilli for added taste.

Mudakathan Keerai Dosai

No. of Servings : 5

Ingredients

Dosai batter - 4 cups

Mudakathan keerai - 2 cup

Red chilli - 2

Tomato - 1 medium


Preparation Method

1. Separate the leaves of the keerai from the vine.

2. Wash well 4 times

3. Grind to paste along with tomato and red chilli.

4. Add it to dosai batter and mix well.

5. Make dosai and serve with chutney and sambar. It does well with idli podi also.

Coconut Rava Kesari



My twist on the regular rava kesari is that I have added coconut paste for a nice and different flavour, the flavour and taste was delicious :)

Coconut Rava Kesari

No. of Servings : 5

Ingredients

Rava - 1 cup

Sugar - 3/4 cup

Milk - 1 cup

Water - 1 1/2 cup

Thick coconut paste - 4 tbsp

Cardamom powder - 1 tsp

Ghee - 2 tbsp



Preparation Method

1. Fry rava in ghee till a nice aroma comes, keep aside.

2. Boil water, milk, coconut paste and cardamom powder.

3. When it comes to a boil, add the rava little by little stirring continuously.

4. When the mixture thickens add sugar and stir for 5 minutes.

5. Garnish with nuts fried in ghee.

Almond Rava Kesari



This is my own innovative recipe. My twist on the regular rava kesari is that I have added almond for more nutrition, taste and flavour.

Almond Rava Kesari

No. of Servings : 3

Ingredients

Rava / sooji - 1 cup

Sugar - 3/4 cup

Water - 1 1/2 cup

Milk - 1 cup

Almond - 25

Ghee - 2 tbsp

Salt a pinch



Preparation Method

1. Blanch almond and grind it to paste with 1/2 cup water.

2. Fry rava in ghee till a nice aroma comes and keep aside.

3. In a non-stick kadai, mix remaining water, milk and ground almond paste and bring it to a boil.

4. Add the fried rava, stirring continuously. Add sugar and mix well.

5. Mix for 5 minutes.

6. Serve with almonds or any nuts.

Soft Spongy Idli Recipe




A facebook friend of mine requested me to post the recipe on how to make soft spongy and white idli. This I am posting on her request. This is how I make idli everytime.



Soft Spongy Idli Recipe

Ingredients

Idli rice - 8 cups

Urad Dal - 2 cups

Fenugreek seeds - 1 tsp

Water as required

Salt as required



Preparation Method

1. The ratio is 4 : 1 ; rice : urad dal

2. Soak urad dal and fenugreek together , rice separately for 8 hrs.

3. First grind to fluffy batter the urad dal and fenugreek seeds in the grinder. You must sprinkle water from time to time to get it fluffy. You must grind it exactly for 15 minutes, no more or less time.

4. Transfer into a vessel.

5. Grind the rice for 30 minutes till little course.

6. Transfer to the urad dal mix.

7. Mix in salt and leave it overnight to ferment.

8. I make idli in the pressure cooker. Pour water in the cooker and bring it to a boil before greasing and pouring the batter into the mould.

9. Steam for 10 minutes.



Notes :
  • The urad dal must be ground fluffy and light.
  • The rice must be ground little coarsely.
  • The water in the pressure cooker must be boiling before the idli mould is placed into it, only then u will get fluffy idli otherwise idli will become flat.
  • Adjust the rice according to your grinder capacity. Remember ratio rice : urad dal ; 4 : 1
  • You can also grind it in mixer / blender, you will get the same soft and spongy idli.
