Mango Rava Cake



Mangoes are in season now, just thought of trying a cake out of it. I made a mango rava cake and it turned out very delicious. Hurry !!! before the mango season ends why don't you folks try this awesome cake. This cake has a shelf life of one day , so please refrigerate it.

Mango Rava Cake

No. of Servings : 6

Ingredients

Rava / Sooji - 2 cups

Sugar - 2 cups

Yogurt / Curd thick - 2 cups

Ghee melted - 4 tbsp

Baking powder - 1 tsp

Salt - a pinch

Mango ripe - 1 medium



Preparation Method

1. In a mixing bowl add rava, sugar, baking powder and salt and mix well.

2. To the above mixture add thick yogurt and melted ghee and mix well.

3. Peel, chop mango and puree it.

4. Add it to the rava mixture.

5. Rest it for 1 hr.

6. Preheat oven at 180 degree for 10 minutes in mode "bake".

7. Grease a 7" diameter mould with ghee and pour the cake mix into it.

8. Bake it for 40 minutes at 180 degrees at mode "bake".

Notes :

This cake has a shelf life of one day , so please refrigerate it.

Mango Parfait



For this summer let's give our kids some good healthy homemade dessert. Mango Parfait is a perfect dessert for this hot summer and kids will enjoy it. I have used almonds and walnuts, you can use any nuts of your choice. Mango mousse used in this recipe is from my previous post (recipe link for your reference).

Mango Parfait

No. of Serving : 2

Ingredients

Mango Mousse - 2 cups - recipe link for your reference

Marie biscuits - 20

Almond - 10

Walnut - 10



Preparation Method

1. Refrigerate and keep chill 2 cups of already prepared mango mousse (recipe link for your reference). Keep aside.

2. In a blender, powder marie biscuits, almond and walnut to a course powder.

3. In a serving glass put a layer of powdered marie biscuit mixture and press it well, then add a layer of mango mousse, repeat has many layers as you wish.

4. Top it with cherry or chopped nuts.


5. Serve chill.

Sweet Dosai



A healthy summer holiday snack for your kids, Sweet dosai. It can be had for breakfast or as a evening snack. Since it is made at home with healthy ingredients you know that you are giving your kids good and hygienic food.

Sweet Dosai

No. of Dosai : 10

Ingredients

Raw Rice (not idly rice) - 3 cups

Cooked steamed rice - 1 cup

Coconut grated - 1/2 cup

Sugar - 1 cup

Cardamom powder - 1 tsp

Yeast - 1/4 tsp

Salt - 1/4 tsp



Preparation Method

1. Soak raw rice in water for 8 hrs.

2. Grind to smooth paste along with cooked rice , grated coconut, sugar, salt and cardamom powder.

3. Let it to ferment overnight.

4. Half an hour before making dosai add the yeast and let it rest for 1/2 hr.

5. Make dosai in tawa , cover and cook till it is done.

Paan Soya Milk Kulfi


Enjoy the summer vacation folks !!! with a Paan Soy Kulfi Stick.

In this recipe I have taken the good parts of the paan and used soya milk to make the paan soy kulfi. I have not used the areca nut and tobacco.

Betel leaves have many medicinal benefits. It relieves cough, headache, constipation, cures boils, used for removing warts, cures gastric ulcers, heals wounds and its antibacterial property helps maintain a good oral hygiene when the leaves are chewed.

Paan Soya Milk Kulfi

No. of kulfi : 10

Ingredients

Soya Milk - 400 ml

Corn flour - 1/4 cup

Sugar - 1 cup

Salt a pinch

Betel leaves - 7 medium size

Fennel seeds - 1/2 tsp

Gulkand or Rose Petals - 1 tbsp

Dates - 7

Paper cups


Preparation Method

1. In a heavy bottom pan, mix together soya milk, corn flour, sugar and a pinch of salt. Place it on the stove, bring it to a boil over a medium flame, stirring continuously. Reduce the flame and simmer for 3 minutes till it  thickens. This takes about 5 minutes. Turn off the flame and let it cool.






2.  In a mixer / blender, grind together betel leaves, dates, fennel seeds, gulkand or rose petals. Add little water and grind to a smooth paste. Filter and keep aside.





3. Mix this to the soya mixture. Pour into a freezer safe box and freeze it for 4 - 5 hrs.



4. After 4 hrs take it and blend it with an electric blender.


5. Pour this into paper cups. Top it with tutti fruity.



6. Cover it with aluminium foil. Make a slit in the middle and insert the ice cream stick. Freeze it. It takes about 7 - 8 hrs to set.




Top it with mint sprinkles. Paan Soya Milk Kulfi is ready to serve.

Watermelon Cucumber Fruit Paneer Lunch Salad


Keep your thirst and hunger at bay ! - with Watermelon Cucumber fruit Paneer Lunch Salad. Watermelon and Cucumber fruit / Vellari Pazham contains nearly 90% water along with other nutrients. Paneer contains protein, calcium and carbohydrate.

Watermelon Cucumber fruit Paneer Lunch Salad

Serving : 1

Ingredients

Watermelon : 100 gms

Cucumber fruit / Vellari Pazham - 100 gms

Paneer - 50 gms

Mint - few leaves

Honey or Lemon - optional



Preparation Method

1. Wash the fruits, remove the skin off and chop into cubes.

2. Soak paneer in hot water for 5 minutes and cut them into cubes.

3. Mix the fruits and paneer together.

4. Drizzle honey over the salad or squeeze half a lemon, mix well. This step is optional.

5. Garnish with mint leaves.

Serve as canapés



Serve as fruit bowl



Notes:
  • Chop the fruits and refrigerate them till the paneer is ready to serve.
  • The sweetness of watermelon was just enough for me. You can add honey or lemon, choice is yours !
