Lauki / Sorakkai
subji for this summer. Lauki is a water content vegetable apt for summer. It is
diuretic and easy to digest thus apt for people of all age groups.
Lauki Subji / Sorakkai Subji

Ingredients
Lauki / Sorakkai - 1
medium
Onion - 1 medium
Tomato - 1 medium
Ginger Garlic paste -
1 tsp
Red chilli powder - 2
tsp
Coriander powder - 2
tsp
Turmeric powder - 1/2
tsp
Salt to taste
Oil - 2 tbsp
Coriander leaves for
garnish
For
Tempering
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Preparation
Method
1. In a kadai, heat
oil and add mustard and cumin seeds.
2. When the seeds
bring to crackle, add chopped onion and sauté till the onions turn translucent.
3. Then add ginger
garlic paste and sauté till a nice aroma comes.
4. Then add chopped
lauki / Sorakkai and sauté for 2 minutes.
5. Add red chilli
powder, coriander powder and turmeric powder and sauté.
6. Add little water,
cover and cook till lauki is half done. This takes about 10 minutes.
7. Then add chopped
tomatoes, sauté till the water is completely absorbed and oil separates on the
top of the subji. This takes about 10 minutes.
8. Garnish with
coriander leaves.
9. Serve with chappati. I served it with Lauki chappati.
